I think the allure of restaurant food has something to do with the magic of a dish appearing right in front of you. You don’t know exactly how it was prepared, but it sure tastes good.
For people like me, who aren’t professional chefs, some dishes can only be enjoyed in a restaurant – where the food magically appears.
Too bad restaurant food can be unhealthy and expensive.
But now that I’m slowly trying new foods and playing around with recipes, I’m learning that I can make restaurant food too.
These Cashew Chicken Lettuce Wraps are the best dish I’ve made thus far. Adapted from She Wears Many Hats, this recipe is the perfect combination of sweet and savory. Sorry friends, I am going to make this for every future potluck/dinner party - ever.
Makes 6-8 lettuce wraps.
For stir fry sauce:
For Cashew Chicken:
Mix all ingredients for the stir fry sauce, making sure to dissolve brown sugar. Set aside.
Dice the chicken and the onion. Mince 2 garlic cloves.
Heat oil in pan over medium to medium high heat. Add diced chicken and brown for about 4-5 minutes.
Remove chicken from pan.
Add onions, garlic, and 1 teaspoon soy sauce to pan and brown for approximately 2-3 minutes.
When onions and garlic are tender, add browned chicken, stir fry sauce, and cashews.
Saute mixture for a few minutes and remove from heat.
Spoon chicken mixture into individual lettuce leaves.
